Creamy Broccoli Soup – Psoriasis friendly recipe

Broccoli is Psoriasis friendly and is a rich source of minerals, fibre and multiple vitamins. Try this delicious Broccoli cream soup.
Clean your broccoli under running water. Slice the florets into bite-sized pieces, cut the stems, peel off the tough layers and slice them thin to cook easy. Set aside in a bowl with vinegar added water.
Chop the other vegetables
Add the oil, chopped garlic, onions and celery into a pot over medium heat, stirring occasionally, sauté about 4-5 minutes until softened. Avoid overcooking, these are the vegetables you can even eat raw, they have to be just soft enough to blend.
Add the broccoli and coconut milk and the water (or vegetable broth) and boil for 5 minutes over medium-high heat until broccoli is soft and still light green. (you can add half a cup more water if you wish more liquid consistency)
Using a blender, puree until smooth, season with salt to taste (you can add freshly ground peppers if you wish)
Garnish and serve hot with Gluten-free croutons or gluten-free bread and some lemon slices.
